The business was started in late 2009 by Michelle Kozak after she returned from a four-week long intensive pastry course at Le Cordon Bleu in Paris. In the fall of 2010 Michelle returned to Paris to
complete the second of the three courses needed for her pastry chef diploma, and in the fall of 2011 she completed the program and received her pastry chef diploma. In addition to being a baker,
Michelle was also a banker who worked full-time in that profession while going to Paris each of these three years. In March 2012 she left her banking job to focus full-time on Pâtisserie
Lallier.
In France, pastry shops are known as pâtisseries, and many times these stores take the name of the chef who founded them. Michelle's grandfather's family, the Lalliers, came to this country from
France in the 1800s. There is a statue on the Hôtel de Ville (City Hall) in Paris of Michel de Lallier who was the mayor of the city in the 1400s, and there is a street named after him, Rue
Lallier, in the 9th arrondissement. While uncertain of whether there is a family connection, the street signs on Rue Lallier have been the site of many photos for her family members
visiting Paris over the years. This is the origin of the name Pâtisserie Lallier.
